Tiramisu’ Recipe
Tiramisu’ is a traditional dessert originating from Italy. Tiramisu' literally means, “pick me up” referring to its ingredients, strong espresso coffee and sugar. Today Tiramisu' has become a favorite in European and Italian American restaurants and culinary arts.
For this dessert you should use Savoiardi or ladyfingers make sure they are imported from Italy sometimes you can replace them with sponge cake or Amaretti biscotti, or any cookies you like but, I'd like to keep things simple and original.
The Mascarpone cheese should be from Italy, but if you cannot find it use Belgioioso, a domestic version made by the same company as Auricchio America, is not bad at all. You should make this dessert a day ahead before you serve it, because it needs to be refrigerated.
Ingredients:
1/2 pound Mascarpone cheese (imported or domestic)
1 pkg. Savoiardi ladyfingers 250g. or 500g packs are avalable online here too
4 tablespoons sugar
1/2 cup Cognac, Amaretto or Strega Liquor
4 egg Yolks
1 cup strong espresso coffee, cooled
3 egg whites
1/4 cup of whipping cream
Cocoa powder
Directions:
*Make a very strong espresso using real espresso coffee and a traditional espresso coffee maker would be ideal
- Beat cheese, egg yolks, 2 tablespoon sugar and 2 tablespoons cognac.
- Beat egg whites until stiff and shiny and add the Mascarpone cream cheese in the end.
- Dip Savoiardi (ladyfingers) in espresso make sure it has sugar
*Alternate layers of ladyfingers and cream; ending with cream.
*Dust with cocoa powder. Refrigerate. Serve cold not chilled. Enjoy!
