		<description>Ingredients: Pollo Al Forno Con Patate    4 large size chicken thighs with drum (skin on or off)  1/2 Lbs. yellow large potatoes diced  1 Can 14oz. crushed tomatoes  (optional)  1 large onion finely chopped   1 tablespoon of Chopped Parsley  2 teaspoons of Rosemary Leaves  2 tablespoons Extra Virgin olive oil   1 pinch of Black Pepper   3 pinches of salt or to your taste  2 tablespoon of Paprika  1 cup of dry white wine     Directions:  Place chicken thighs in a aluminum pan, pour Extra Virgin Olive Oil, tomatoes, salt, Pepper, Paprika, onions, Rosemary leafs and finally Parsley. Rub all the ingredients into the chicken for a minute and let it sit for 5 minutes.  Pour the white wine and half a cup of water over the whole mix and place in the oven at 350 degrees Fahrenheit, let it backe for 45- 60 Minutes by occasionally stirring the stew all around the chicken tights. If you notice that it is dry add some water and more wine to moisten the stew till chicken and potatoes are brown and tender.     You can serve the sauce of this dish over Rigatoni or Bucatini pasta with freshly grated Parmiggiano cheese right on top and finally serve the chicken thighs on the side as second course with a green leaf salad oil and Balsamic Vinegar dressing.
